Canning can be done in the solar oven- or how about a solar baked New York
style cheese cake! Have you ever made Polenta?

Acid
fruits and tomatoes can be "canned" in the solar oven. The process is simple.
In this case tomatoes are packed into a clean canning jar, water is added
leaving 1/2" head space at the top of the jar. The dome type canning lids
are snugged onto the jars. Then the jars are placed into the solar oven
that has been heated to at least 215 F ( sea-level) The contents of the
jars will boil past the lids after a couple of hours or so. The jar is
then removed, wiped clean, and allowed to cool. Repeat this process for
as many jars as there are in the oven. After cooling, each jar is checked
for a positive lid seal. If a lid did not seal, then simply add more water
and process again. This non pressurization canning method is safe for acid fruits and tomatoes only. Conventional canning methods must be used for non acid type of foods.
SOLAR OVEN CHEESECAKE (New York style)
Yes, you can bake an old fashioned dessert in the solar oven!
Cream cheese, flour, sugar, eggs, and some grated
lemon and orange are poured into a graham cracker crust.

The pan is covered and allowed to bake in the solar
oven for about 2 3/4 hour at 250F (or until a toothpick comes out clean)
The cheese cake is chilled and served. No compromise here! This is the
real thing- put some cherries on top!
POLENTA this is
just too easy !
3 cups water, 1 cup corn meal, dash salt (some cayenne if you like)-
stir, cover- 2 3/4 hours in the solar oven until firm. Chill, slice, and
fry or steam. This stuff goes with anything from beans to jam!
